Mung Bean/Bean Sprouts: A Crisp and Nutty Delight in Asian Cuisines
Mung bean sprouts, a common sight in Asian stir-fries, offer a crisp and slightly nutty taste that can elevate any dish. In the supermarket, you'll typically find them labeled simply as "bean sprouts." These are among the fastest-growing beans and seeds, with the ability to sprout in as little as one or two days.
Begin by rinsing the mung beans until the water runs clear. Mung beans tend to grow significantly in size once they sprout, so it's essential to be mindful of not making too much. Place the rinsed beans in a clean, clear bowl. Alternatively, you can use a sprouter or the mason jar method.
Next, pour enough cold water into the bowl to submerge the beans, approximately 2 to 3 times the volume of the beans themselves. Soak the beans for 6-12 hours, typically around 8 hours. During this time, the beans will swell as they absorb the water.
Drain the excess water, rinse the beans with cold water, and drain them again. Transfer the swelled beans to a sprouting jar, covering it with a cheesecloth or mesh lid (not the jar lid). Place the jar in a cool, dry, and dark location, such as the bottom of a closet or pantry, where it will not be disturbed.
Over the next 2-5 days, you'll need to repeat the process of rinsing and draining the beans every 12 hours, replacing them in the dark spot. The length of this cycle will depend on how sprouted you want your beans to be.
When the beans have reached the desired length of sprout, they're ready to be enjoyed! Mung bean sprouts make a delicious and nutritious addition to a variety of dishes, from stir-fries to salads and soups.
